Waffle Maker Quesadilla
Ingredients:
1 La Tortilla Factory low carb tortilla
1/4 low fat mozzarella (or other cheese)
1 chicken breast, sliced
Your favorite veggies (I use spinach, red bell pepper, and mushrooms)
Salsa
Avocado
Nonfat plain Greek yogurt (in place of sour cream)
Directions:
1. Heat up waffle maker
2. Place tortilla on waffle maker and top HALF of the tortilla with cheese
3. Add your chicken and veggies
4. Fold the tortilla in half
5. Cook the quesadilla according to your waffle makers instructions
6. Top with salsa, avocado, and nonfat plain Greek yogurt
