Sweet & Salty Roasted Chickpeas
It can be such a challenge to find healthy, high protein, on-the-go snacks. Especially when you have limited calories and finances.. The struggle is REAL!

Makes 4 servings (about 1/2 cup each)
Ingredients:
1/2 lb dry chickpeas
1 tbs honey (or agave nectar)
Cinnamon, to taste
Sea salt, to taste
Directions
1. Boil chickpeas for 2 minutes, remove from heat, and let sit, covered, for 60-90 minutes.
2. Preheat oven to 375F.
3. Rinse chickpeas under water and dry.
4. Coat a baking tray with nonstick spray and evenly spread chickpeas.
5. Bake for about 1 hour, make sure they do not burn (I learned this lesson the hard way).
6. Immediately, toss chickpeas in honey, cinnamon, and sea salt.
7. Broil on high for 8-10 minutes to caramelize.
8. Let cool and portion into 4 servings (trust me, if you don't, there is a good chance you will eat all of them at once).
