Butternut Squash Pancakes
Serves: 1
Serving Size: 3-4 small pancakes
Ingredients:
1/2-3/4 cup butternut squash, cubed
2 tbs oat flour
2 egg whites
1 tsp cinnamon
1/4 cup almond milk
Directions:
1. Make sure squash is fully cooked, it shouldn't be hard
2. Add all ingredients to a food processor or blender
3. Blend all together and pour into pan (about 3-4 pancakes)
4. Flip after 3-4 minutes
5. Top with whatever you desire!
