Baked Meatballs & Veggies
Meatball Ingredients:
1 lb extra lean ground beef (I like the HEB brand)
1 lb extra lean ground turkey
1/2 cup parmesan cheese, shredded
1 egg
1 slice Ezekiel bread, crumbled
Oregano
Basil
Garlic powder
Sea salt
Black pepper
Veggie Ingredients:
1 acorn squash
1 lb brussel sprouts
1/2 yellow onion
1 tbs honey or agave nectar
2 tbs balsamic vinegar
Directions:
1. Preheat oven to 350F.
2. Wash acorn squash and scoop out seeds.
3. Slice the acorn squash and onion.
4. Wash and cut off the brussel sprout ends.
5. Cut brussel sprouts into quarters.
6. In a large baking dish, combine all veggies and bake for 10 minutes.
7. In the meantime, combine all the ingredients for the meatballs in a large bowl. Use as much or as little seasoning as you want- I like a lot.
8. Coat a large baking sheet with nonstick spray.
9. Roll meatballs into 1" balls and place on baking sheet.
10. Bake the meatballs with the veggies for an additional 20-25 minutes. The veggies should be in the oven for a total of 30-35 minutes.
11. When meatballs and veggies are thoroughly cooked, remove from oven.
12. Drizzle honey and balsamic vinegar over veggies.
13. Serve warm, or store in the fridge/freezer for leftovers!
