Buffalo Turkey Sweet Potato Skins
Ingredients (for 2 servings):
1 medium sweet potato, cooked
6-8 ounces ground turkey, cooked
1 tbs olive oil
1/3 cup carrots, chopped
1/3 cup celery, chopped
1/2 tsp onion powder
1 tsp garlic powder
Frank's Hot Sauce, flavor of choice
1/2 cup shredded low fat mozzarella cheese (Trader Joe's brand is the best!)
Directions:
1. Turn on oven broiler
2. Slice potato in half, longways
3. Spoon out the flesh of the potato and set aside in a bowl
4. In medium pan, sauté carrots and celery in olive oil and season with onion powder and garlic powder
6. Place potato skins on tinfoil, skin side up
7. Broil skins for 4-5 minutes, then flip so that the skin side is down
8. Broil for 4-5 more minutes
9. Mash potato flesh well, and combine with cooked carrots, celery, and ground turkey
10. Season mixture with hot sauce to your liking (I like a lot!)
11. Remove potato skins from oven and spoon the mixture evenly between the skins
12. Sprinkle 1/4 cup cheese on each potato skin
13. Place back under the broiler until the cheese is melted
