Beef Stuffed Bell Peppers
Ingredients:
2 tbs olive oil
1 lb extra lean ground beef
2 large green bell peppers, halved
1/2 large yellow onion, chopped
1/2 cup cherry tomatoes, halved
1/3 cup white mushrooms, chopped
1/4 cup black olives, chopped
4 tbs parmesan cheese
Garlic powder, sea salt, black pepper, to taste
Directions:
1. In a large skillet, heat olive oil and cook ground beef. Season with garlic powder, black pepper, and sea salt.
2. In a separate pan, heat 1 tbs olive oil and add onion, tomatoes, and mushrooms.
3. Cook over medium-high heat, until veggies are cooked. Add black olives.
4. Pour veggies into the beef skillet and mix well.
5. Preheat oven to 375F and line a baking sheet with tinfoil. Coat with nonstick spray.
6. Stuff each bell pepper with the beef mixture. Top with 1 tbs parmesan cheese. The mixture will probably over flow onto the baking sheet.
7. Bake for 15 minutes.
