Shrimp & Cauliflower Fried Rice
Ingredients:
1 tbs coconut oil
1 head of cauliflower, uncooked
1/2 cup celery, coppped
1/2 cup carrots, chopped
1/2 large yellow onion, chopped
3 tbs hoison sauce
Garlic powder, black pepper, and sea salt, to taste
Directions:
1. Finely chop raw cauliflower or use a food processor- You want to end up with a rice-like consistency.
2. Heat 1 tbs coconut oil in large pan and pour cauliflower in pan.
3. Cook over medium-high heat until cauliflower starts to cook- about 4-5 minutes.
4. Add celery, carrots, and onion to the pan.
5. Continue to cook until all the veggies are cooked.
6. Add hoison sauce and seasonings. Mix well.
7. Serve with shrimp, or meat of your choice.
