Peanut Butter Protein Cheesecake
Ingredients:
Crust-
3 chocolate graham crackers
2 tbs butter
Filling-
10 oz nonfat, plain greek yogurt
12 oz nonfat cream cheese
2 eggs
1 scoop Quest Nutrition protein powder (vanilla or peanut butter)
4 tsp coconut sugar
4 tbs PB2 (or other powdered peanut butter)
1/3 cup dark chocolate chips
Directions:
1. Preheat oven to 325F
2. Coat 6" cake pan with nonstick spray
3. Melt butter and mix with graham cracker
4. Press crust mixture onto the bottom of the pan
5. Using a mixer, combine greek yogurt, cream cheese, and eggs
6. Mix in protein powder, PB2, and coconut sugar
7. Once thoroughly mixed, evenly pour filling on top of crust
8. Evenly prinkle chocolate chips on top
9. Bake for 20 minutes
10. Reduce oven temperature to 200F and continue baking for 60-70 minutes
11. Cheesecake should be slightly jiggly when removing from the oven
12. Let cool for 30 minutes, then place in fridge over night (or at least 4-5 hours)
13. Serve by itself, with cool whip, or with vanilla ice cream
