Mini Pumpkin Pecan Protein Pies
The wonderful Lauren, from Labrada Nutrition, sent me a couple bags of Jamie Eason's Lean Body for Her Protein.. Chocolate & vanilla! I've been having lots of fun experimenting with different recipe combinations and food creations, using this protein (www.labrada.com/store/wheyisolateforher.html). And with it being in the midst of the holiday season, it's the perfect time to get my creative juices flowing.

Ingredients:
"Crust":
2 scoops Vanilla Lean Body for Her Protein
2 tbs oat flour
2 tbs butter
1/4 cup vanilla almond milk
Filling:
1 cup pumpkin puree
2 tbs agave nectar
1/2 tsp cinnamon
Toppings:
12 pecans
Dark chocolate chips
Directions:
1. Preheat oven to 400F
2. Combine all crust ingredients
3. Divide "crust" evenly among 12 muffin tins
4. Combine all filling inredients
5. Evenly spoon filling onto crust
6. Top each pie with 1 pecan and 3 dark chocolate chips
7. Bake for 10-12 minutes
8. Let cool for 5 minutes, remove from muffin tins
9. Serve with cool whip!
