Egg Muffins
Servings: 12 muffins
Serving Size: 2 muffins
Ingredients:
1 package Jeanie-O ground breakfast turkey sausage
6 eggs
6 egg whites
2 cups spinach, chopped
3/4 cups fat free ricotta cheese
Directions:
1. Preheat oven to 350F and cook ground turkey over skillet.
2. In a larger bowl, combine eggs, egg whites, and spinach.
3. Spray 12 muffin tins with nonstick spray and evenly distribute HALF of the egg mixture into each tin.
4. Evenly distribute sausage and ricotta into muffin tins.
5. Pour the rest of the egg mixture on top and bake for 20 minutes.
