Cleaned Up PB&J Muffins
Serves: 12
Serving Size: 1 muffin
Ingredients:
1/2 cup oat flour
1/2 cup almond flour
2 tbs coconut flour
1 tsp baking powder
1/4 tsp baking soda
1 tsp cinnnamon
1/4 cup truvia
2/3 cup egg whites
1/4 cup all natural almond butter
1 tsp vanilla extract
1/3 cup almond milk
1/3 cup all natural applesauce
12 fresh blackberries
Directions:
1. Preheat oven to 350F
2. Line 12 muffin tins with paper muffin cups, or nonstick spray
3. Combine all ingredients and mix well
4. Divide half the batter among the 12 muffin cups (about 1 tbs each)
5. Place 1 blackberry in each muffin
6. Divide the rest of the batter among the 12 muffins
7. Bake for 12 minutes, or until toothpick comes out clean
