Mediterranean-Style Veggies
Serves: 4 (about 3/4 cup per serving)
Ingredients:
1-2 tbs olive oil
1/2 sweet onion, sliced
1 medium zucchini, cubed
1 medium squash, cubed
1 cup white mushrooms, sliced
A lot of spinach leaves (as much as you want- it'll cook down to almost nothing)
4 tbs kalamata olives, diced
4 tbs feta cheese
Directions:
1. In a medium-sized skillet, heat olive oil over high heat for 1 minute.
2. Lower heat to medium-high and add onion.
3. Once the onion begins to cook, add in zucchini, squash, and mushrooms.
4. Continuing to cook over medium-high heat, saute veggies until cooked thoroughly. I like to cook my veggies until they're golden-brown (especially the onion), but this is just my preference.
5. While the veggies are still in the skillet, turn off the heat. Add in the kalamata olives and feta cheese.
6. Combine well and serve warm.
