Almond Flour (Low-Carb) Chocolate Chip Cookies
Ingredients:
(Makes 12 cookies)
1 1/2 cups almond flour*
1/4 cup coconut oil
2 tbs agave nectar or honey
1 egg
1 tsp vanilla
1 tsp cinnamon
1/2 tsp baking soda
1/3 cup dark chocolate chips
Directions:
1. Preheat oven to 350F and line a baking sheet with parchment paper.
2. Combine all dry ingredients in a large bowl.
3. Add remaining ingredients.
4. Coat parchment paper with nonstick spray.
5. Spoon cookie dough onto parchment paper, about 1 tbs each (this recipe should make 12 cookies).
6. Bake for 8-10 minutes.
7. Let cool (or don't & enjoy them warm like I do), and devour!
P.S. These are also really yummy straight out of the freezer!
*I ran out of almond flour once when I made these. I ended up substituting 1/4 cup ground flax seed and they turned out great! Feel free to try subbing other flours, too.
